Summer went by so quickly. Who else thinks that the colder days call for some oatmeal, cookies, pumpkin – autumn foods?

My spontaneous idea was to combine it all in one.  Healthy pumpkin spiced, oatmeal cookies – you in?

I used a pumpkin syrup that was already sweetened and contained spices. As it may not be available for everyone on here it will say “1 tbsp of nut butter/apple puree” in the recipe. However this means that you might want to try the mixture, adjust the sweetness and add some spices (cinnamon, cardamom, vanilla) yourself.

– 1 cup of oats
– 1/3 cup of raisins
– a handful of mulberries
– a handful of almonds
– 1 tbsp of nut butter or a puree (e.g. apple/pumpkin)
– 1 tbsp of water

  1. Blend all the dry ingredients for a few seconds. This step might not be necessary but I think it helps to make the mixture stick together better.
  2. Add the wet ingredients and mix thorougly (witha fork or your hands).
  3. Form cookies and bake them on 200°c (390°F) for 10 minutes.
